I was recently told that employers in the state of Colorado must pay employees a minimum of 2 hours pay for a meeting even if it only lasts 15 minutes. Has anyone heard of that?

I presume you're referring to a meeting on a non-work day or during non-work hours.  Nope, never heard of it.  You're free to ask the state labor dept.

Colorado does not have a law requiring 2 hours of pay for a 15 minute meeting. See the Colorado Department of Labor Wage and Hours Laws page for more information on what Colorado law does require.
