I'm looking for some case law, if there is any, concerning the admissibility of copied video or video from a hard drive camera (which would HAVE to be copied to watch it). I'm also looking for any opinions on time stamps vs. the time shown within the properties of the video. Both can be altered either before the video is taken &/or after. Are these time stamps making or breaking cases?

The rules of evidence are state specific.  Opinions regarding time stamps, etc. come from experts in the field, not from the opinion of any court in an appellate case.

Case law is state specific.  As for altering time stamps, virtually any evidence can be altered.  The abstract possibility of alteration is of no relevance regarding admissibility.
